      These are averages drawn from standard food-composition tables and baking references. Real ingredients vary with brand, humidity, grind and above all how the cup is filled, so treat the result as a close estimate.

      Why flour is the tricky one

      The 120 g figure assumes flour that is spooned into the cup and leveled off. Scooping the cup straight into the bag packs it down and can give 140–150 g — up to a quarter more flour than the recipe intended, which is a common cause of dry, dense baking. Some references use 125 g per cup. If a recipe gives weights, use them.

      Which cup?

      This calculator uses the US customary cup of 236.6 mL. A metric cup, used in Australia, New Zealand and Canada, is 250 mL — about 6% bigger. Older British recipes may mean an imperial cup of 284 mL. For a metric cup, multiply the gram figure by 1.057.

      227 g, which is two US sticks or half a pound. One stick (½ cup) is 113 g and one tablespoon is about 14 g.
