      The USDA timetable at 325 °F

      Unstuffed: 8–12 lb takes 2¾ to 3 hours; 12–14 lb, 3 to 3¾ hours; 14–18 lb, 3¾ to 4¼ hours; 18–20 lb, 4¼ to 4½ hours; 20–24 lb, 4½ to 5 hours.

      Stuffed: 8–12 lb takes 3 to 3½ hours; 12–14 lb, 3½ to 4 hours; 14–18 lb, 4 to 4¼ hours; 18–20 lb, 4¼ to 4¾ hours; 20–24 lb, 4¾ to 5¼ hours.

      These times are for a fully thawed bird in a conventional oven set to 325 °F (165 °C), which is the lowest oven temperature the USDA recommends. The calculator reads between the ends of each bracket, so a 16 lb turkey lands in the middle of its range. The 350 °F option is a widely used rule of thumb, not a USDA figure. Convection ovens, roasting bags, dark pans and spatchcocked birds all cook faster.

      Use a thermometer, not the clock

      Times are estimates. The turkey is safe when a food thermometer reads at least 165 °F (74 °C) in the thickest part of the breast, the innermost part of the thigh and the innermost part of the wing — and in the center of the stuffing, if there is any. Start checking about 30 minutes before the estimated time.

      Let the turkey rest for 20 minutes before carving so the juices settle. Do not rely on a pop-up timer alone.

      Thawing safely

      In the refrigerator, allow about 24 hours for every 4 to 5 pounds: 1 to 3 days for 4–12 lb, 3 to 4 days for 12–16 lb, 4 to 5 days for 16–20 lb and 5 to 6 days for 20–24 lb. A thawed turkey keeps for another day or two in the fridge.

      For faster thawing, submerge the wrapped turkey in cold water, changing the water every 30 minutes, and allow about 30 minutes per pound; cook it immediately afterwards. Never thaw a turkey on the counter.

      About 4 hours unstuffed at 325 °F — the USDA range for 14–18 lb is 3¾ to 4¼ hours. Stuffed, allow 4 to 4¼ hours.

      At 325 °F, about 4½ hours unstuffed (USDA range for 18–20 lb: 4¼ to 4½ hours) and about 4¾ hours stuffed.
