Grams per level tablespoon used here

      Butter 14.2 g. All-purpose flour 7.5 g. Granulated sugar 12.5 g. Brown sugar, packed, 13.75 g. Honey 21.2 g. Vegetable or olive oil 13.6 g. Milk 15.3 g. Water 14.8 g. Peanut butter 16 g. Cocoa powder 5.3 g. Cornstarch 8 g.

Flour assumes spooning into the measure and leveling; dipping the spoon into the bag packs it and can add a gram or more per tablespoon.

      Butter by the tablespoon

A US stick of butter is 1/2 cup, 8 tablespoons or 113 g, and the wrapper is usually marked in tablespoons, so you can cut the amount you need without weighing. Four sticks make a pound.

      Which tablespoon?

This uses the US tablespoon of 14.8 mL. A UK or metric tablespoon is 15 mL — close enough not to matter — but an Australian tablespoon is 20 mL, four teaspoons rather than three, so Australian recipes hold about a third more per tablespoon.
